On the Nose: Fresh and complex with aromas of ripe cherry, blackberry, and cassis, complemented by savoury spice, dried herbs, and subtle leafy notes.
On the Palate: Medium to full-bodied with ripe red and black fruit flavours, balanced by fine tannins and fresh acidity. Layers of cherry, blackcurrant, and savoury spice lead to a structured yet elegant palate.
The Finish: Long and lifted with a fresh, leafy finish, fine tannins, and lingering berry fruit.
Food Pairing: Pairs beautifully with grilled or roasted lamb, beef, and venison, as well as slow-cooked casseroles and mushroom dishes. It also complements mature cheddar, aged Gouda, and other hard cheeses, with its structure and savoury character making it an excellent partner for hearty cuisine.
Sally’s Hill Cabernets 2017 is a classic Bordeaux-inspired blend from the Pyrenees region of Victoria, combining 55% Cabernet Sauvignon with 45% Cabernet Franc. The wine showcases vibrant cherry and berry fruit, complemented by savoury spice, subtle herbal notes, and the lifted leafy character typical of Cabernet Franc. Medium to full-bodied with firm yet refined tannins and fresh natural acidity, it offers excellent balance and structure. While approachable with decanting, its concentration and tannin profile also provide excellent cellaring potential, allowing the wine to develop further complexity over time.
